Whole Kahawai: A lean and muscular fish, our kahawai is sustainably caught around the North Island of New Zealand. Kahawai feeds on a diet of krill and small fish, like anchovy. A common table fish in New Zealand, it’s flesh is dark in colour, however turns white when cooked. The perfect PeakPrey®ingredient, Ziwi use the whole fish in our recipe as a rich source of protein, amino acids, vitamins and minerals.
